Halloween Whoopie Pies
These are THE BEST Whoopie Pies I’ve ever had. If you’re concerned about whoopie pies being too dry, this recipe has the no-fail fix – pudding mix! I’ve adapted this version from DeliciousLittleBites, mostly just by changing the frosting to a lighter, whipped cream frosting, because that’s my personal preference, but gives it a light airy filling which goes well with the rich chocolatey pies!
Ingredients:
- 1 Box Devil’s Food Cake Mix (+ required ingredients):
- 3 Eggs
- Canola Oil
- Chocolate Pudding Mix
- Heavy Whipping Cream
- Confectioner’s Sugar
- Orange Food Gel Coloring
Instructions:
For the Cookies
- Preheat oven to 350°F
- Combine the cake mix, eggs, water, oil and pudding mix in a large bowl and beat until well incorporated.
- Depending how big you want your whoopie pies, choose a scoop for even portions and begin dropping scoopfuls of the mix onto a lined baking sheet. Keep in mind they will expand quite a bit, so suggest erring on the smaller side… my first attempt came out far too big, next time I will aim for half-dollar sized dollops, and they should come out just perfect.
- Bake 7-10 minutes depending on the size of the cookies.
- Let cool completely before decorating.
For the Whipped Frosting
- Keep all ingredients cold until ready to whip (one trick is to keep the bowl and beaters in the freezer, and even the heavy cream for a few minutes, before ready to use).
- Start with half the heavy whipping cream in the mixer bowl and begin whipping with whisk attachment on high speed until it begins to thicken and peaks start to form.
- Slowly add confectioner sugar, about half cup at a time, until it reaches your desired sweetness. I tend to use less sugar than most recipes as I find the lightness of the frosting is a really nice with the rich cookies. I used close to 1 cup of confectioner sugar and the entire pint of whipping cream.
- Once your frosting looks and taste complete, add a little orange food coloring gel to the frosting and mix until totally incorporated. Continue adding more coloring until it reaches your desired color of orange!
- Decorate the filling with sprinkles or add googly eyes or other decorations to the tops of the cookies as desired!
